These Crispy Jalapeño Popper Chaffles are out-of-this-world delicious!! They’re made with just almond flour, cream cheese, an egg, cheddar, diced jalapeños and crumbled bacon. Can you believe all of those yummy ingredients are keto and low carb?
Simply mix everything up and pour the batter into your mini waffle maker. They’re even better topped with little extra cream cheese, because why not? My husband devoured these and he’s not even on anything near a keto diet.
This simple chaffle recipe makes 2 small waffles and is perfect for a mid-day snack or even a spiced up sandwich! Keto BLT, anyone? No such thing as too much bacon.
I actually found that these chaffles had the perfect jalapeño flavor without being overwhelmingly spicy, but you can leave the seeds in the batter if you like things really spicy.
I prefer my chaffles extra crispy so I always add a little shredded cheese to the mini waffle maker before pouring the batter in. It makes the waffles more like toast than bread which is favorable paired with the cream cheese spread.
Jalapeno Popper Chaffles (Keto & Low Carb)

- Mini Waffle Maker
Ingredients
- 1 egg
- 1 tbsp almond flour
- 1/2 cup shredded cheddar cheese (plus more for the griddle)
- 1 tbsp softened cream cheese
- 1/2 tbsp freshly diced jalapeno
- 2 tbsp crumbled bacon
- pinch garlic powder
Instructions
- Preheat your mini waffle maker.
- In a small bowl, whisk the egg together and then add the rest of the ingredients and mix well.
- Sprinkle a little shredded cheddar directly onto the griddle.
- Pour half of the batter in and sprinkle with a little more cheese.
- Close the lid and cook for 3-5 minutes or until the automatic timer or light goes off; repeat for next chaffle.
- Enjoy alone or with a little cream cheese spread over top!
