It’s incredibly delicious yet healthy and totally guilt free!
This low carb dinner skillet is perfect for anyone who doesn’t want to spend all night in the kitchen cooking and cleaning up. Thanks to frozen cauliflower rice and ground beef, this recipe is a breeze to throw together in just one pan on busy weeknights, and is just as good leftover so you can get at least two meals out of it.
Lazy Day Keto Mexican Ground Beef Skillet
Start off by sautéing the onion and bell pepper with a little bit of olive oil or butter until they become soft. By the way, you can use any color bell pepper or even a combination.
Add the ground beef to the pan and chop it up into small chunks until no longer pink. Stir in about 1/2 cup of water and a packet of taco seasoning.
Add the frozen cauliflower rice and a can of Rotel in with the beef mixture; stir and let simmer for about 10 minutes or until hot.
Top with a generous amount of shredded cheese and dig in! Even your non-keto family and friends will enjoy this quick and easy low carb dinner recipe. It’s full of flavor but with very little effort. If you have kids or picky eaters, you can always set aside some of the beef mixture to make them tacos on the side.

Cheesy Taco Ground Beef & Cauliflower Rice Skillet
Ingredients
- 1 lb ground beef
- 1 (20oz) bag frozen cauliflower rice
- 1 (10oz) can diced tomatoes & chilies
- 1 packet taco seasoning
- 1/2 cup water
- 1 diced bell pepper
- 1 small diced yellow onion
- 1 tbsp oil
- 1+ cups of shredded cheddar cheese
Instructions
- In a large pan set to medium heat, sauté the diced onion and bell pepper with about a tbsp of oil for 3-4 minutes or until they start to become soft.
- Add the ground beef to the pan and cook until no longer pink; stir in the taco seasoning and water.
- Stir in the frozen cauliflower rice and can of diced tomatoes and chilies to the pan; simmer for about 10 minutes or until hot.
- Top with shredded cheddar cheese and allow it to melt.
- Enjoy alone or with avocado, sour cream, jalapenos, lettuce or anything else you'd like.
