Caprese toast is a delicious and easy-to-prepare meal that will satisfy your hunger without weighing you down. The best part? This recipe requires no baking, making it a quick and easy lunch option, or even effortless weekday dinner when you’re not in the mood to cook.
With its combination of fresh ingredients and simple preparation, this chopped caprese toast is yummy and healthy! The juicy tomatoes, mozzarella cheese, aromatic basil leaves, and olive oil come together to create a refreshing flavor that will leave you feeling happy and satisfied.
Ingredients
- 2-3 large tomatoes
- 1 (8oz) block mozzarella cheese
- 2 bunches of basil leaves
- 3 tbsp extra virgin olive oil
- salt, pepper & garlic powder to taste
- sour dough, French bread or a baguette for serving
Step 1 Start by chopping the block of mozzarella, tomatoes and fresh basil into small chunks and pieces.
Step 2 Toss with about 3 tbsp of extra virgin olive oil and then season to your liking with a little bit of salt, black pepper and garlic powder. Go easy on the seasoning, it really doesn’t need much.
Step 3 Serve on your favorite toasted bread. We prefer sourdough or French bread. A sliced baguette is a nice option, too!
Step 4You can cut the toast in half or even into quarters to make it easier to eat. When the deli section at my local grocery store has fresh baguettes, I usually prefer those because they are the perfect size once sliced.

Notes
- What else could you serve this on? How about grilled chicken! I'm definitely trying that next. I could eat this cheesy tomato mixture on just about anything.
- Some other add-in ideas? We've made this a few times with chopped avocado added to the mix. You could also drizzle with a creamy balsamic glaze. I think I'm drooling now.
- How do you toast the bread in bulk? If you're making several pieces of toast all at once, we simply use our toaster oven for a few rounds, but you can also place the bread on a large sheet pan and bake at 400 degrees for about 5 minutes, flipping half way through.
- What kind of bread should I use? I've tried this mixture on just about every fresh bread variety from the deli section. You really can't go wrong, but it's best on a fresh baguette, sourdough, or some sort of French bread. We like to cut the larger slices of bread in half or even quarters once we load them up to make them easier to eat.
