The Entire Family Will Love This Easy Dinner Recipe
This unique recipe is basically a fun twist on your classic taco or burrito. Simply layer your favorite taco ingredients into a baking dish and then bake until warm and bubbly. Top with fresh veggies and sour cream, and watch as everyone licks their plates clean.
If you’re tired of the usual boring dinners on rotation, you can’t go wrong with this family friendly meal. My kids love it! I make the main casserole ingredients very simple, and then we all top our “lasagna” with the topping of our choice.
This quick and easy dinner idea is made with ground beef, refried beans, taco seasoning, tortillas and lots of cheese. The rest is all optional. You can add rice, garlic, onions, peppers, jalapeños, tomatoes, salsa, cilantro or anything else that you like stuffed inside of a taco.

Easy Cheesy Taco Lasagna Recipe
This recipe basically requires layering a few of your favorite taco ingredients into a greased 9×13 baking dish. Yep, just like lasagna! This is basically a really yummy Mexican casserole. I guess you can call it whatever you want. It’s completely family approved, and it will soon be at the top of your recipe index.
Repeat layers one more time.
Top with a few more tortillas and lots of cheese.
And THERE are those beautiful layers! Top with lettuce, cilantro, avocado, tomatoes, sour cream, salsa, hot sauce or anything else you have on hand.
Cheesy Taco Lasagna (Fun and easy dinner idea!)
Ingredients
- 6 flour tortillas (soft taco size)
- 1 (16 ounce) can refried beans
- 1 pound ground beef
- 1 envelope taco seasoning
- 4 cups grated cheddar cheese (or cheese of your choice)
- 2/3 cup water
Optional Ingredients:
- 1/2 cup chopped onion
- 1/2 cup chopped bell pepper
- 1 tbsp minced garlic
- 1 (14 ounce) can mexican diced tomatoes
- 1 (15 ounce) can black beans (drained and rinsed)
Instructions
- In a large skillet, cook the ground beef over medium heat until no longer pink (if you are using onions, garlic or peppers cook these with the beef at the same time).
- Once the beef is brown, add 2/3 cup water and 1 packet of taco seasoning. Let simmer for about 5 minutes. At this time, go ahead and add anything else to the beef mixture that you plan on layering in the lasagna (tomatoes, black beans, etc.), and let simmer, uncovered, for an additional 5-10 minutes.
- Preheat your oven to 350 degrees and grease a 9x13 baking dish.
- Place 2 of your tortillas onto the bottom of the dish and top with half of your refried beans (heat them in the microwave to make them easier to spread). Now, top with half of your beef mixture and a heaping cup of cheese.
- Repeat layers one more time. Top with the remaining 2 tortillas and the rest of the cheese.
- Cover the dish with foil, and bake for 25 minutes. Uncover, and bake for an additional 10 minutes or until the cheese starts to brown a little.
- Serve with the toppings of your choice: lettuce, sour cream, avocado, cilantro, salsa, etc! YUM
- Refrigerate any leftovers for up to 3 days.
Notes
- Don't be afraid to experiment! You can add anything to the mix that you would like: maybe substitute chicken for ground beef, add in a little Spanish rice, or perhaps a jar of diced green chilis! I usually change it up a bit every time I make it, just depending on what I have on hand.
- Feel free to use any cheese that you would like. I like pepper jack, but it's too spicy for my daughter. A mexican blend is also a good choice!
