I’ve never been a fan of canned chicken breast… until now! It’s incredibly convenient to have on hand, and there are so many delicious ways of preparing it. These keto friendly chicken nuggets are effortless to make with just a handful of ingredients that you probably already have on hand including mozzarella cheese, grated parmesan, egg, and a little optional seasoning.
Step 1Canned chicken comes packed in water, so you’ll want to drain the water and remove as much of the moisture as possible. I simply place it in a fine mesh strainer and use my hands to squish and push the excess water out.
Step 2After you’ve got your canned chicken drained, mix it with 1 egg, 3 tbsp of parmesan, 1/3 cup shredded mozzarella, and the seasoning of your choice. I just sprinkle in a little garlic powder and black pepper. No salt needed! There’s plenty of salt already in the chicken and cheese.
Step 3Take your mixture and form about 12 small bite-size chicken nuggets. Place them on a sheet pan over parchment paper or non-stick foil.
Step 4Bake in a 425 degree oven for about 20 minutes, flipping them over half way through for best results. Dip in your favorite sauce and enjoy! I really like the no sugar added bbq sauce from Ray’s.
Easy Baked Chicken Nuggets (Made with Canned Chicken!)
Ingredients
- 1 (12.5oz) can chicken breast (drained)
- 1 large egg
- 1/3 cup shredded mozzarella
- 3 tbsp grated parmesan
- optional seasoning (I use garlic powder & black pepper)
Instructions
- Preheat oven to 425° F and line a baking sheet with parchment paper.
- Open and drain the canned chicken. Remove as much excess moisture as possible by placing it in a fine mesh strainer and squishing out the water with your fingers.
- In a medium sized bowl, mix together the drained chicken with the egg, mozzarella, parmesan, and any seasoning you like, however I DO NOT recommend adding salt. Just a little garlic powder and black pepper should do! Smoked paprika is a good choice, too.
- Use your hands to mold the chicken mixture together into small bite-size nuggets. I made mine using about a heaping tbsp each and ended up with 12 nuggets.
- Bake for 18-22 minutes, flipping them over half way through.
- Enjoy with your favorite dipping sauce! I really like the Ray's no sugar added bbq sauce or ranch dressing.
