Zucchini Boats Stuffed with Ground Chicken, Buffalo Sauce, Ranch Seasoning & Shredded Mozzarella

Zucchini boats are definitely a fun and exciting way to eat veggies. They are a go-to dinner idea for my family especially with ground chicken or beef because they’re so cheap and easy to throw together on busy weeknights.
Easy Low Carb Buffalo Chicken Zucchini Boats
- 4 medium zucchini
- 1lb ground chicken
- 1/2 cup buffalo wing sauce
- 1/2 packet ranch seasoning mix (about 2 tbsp)
- 8oz bag shredded mozzarella (2 cups)
Step 1Start off by prepping your zucchini boats by scraping out the guts with a melon baller or small spoon, and then place them in a greased 9×13 baking dish.
Step 2Cook and chop the chicken until no longer pink and then mix well with the buffalo wing sauce and ranch seasoning; fill the boats with the chicken mixture.
Step 3Top with about 2 cups of shredded mozzarella cheese, cover with foil and bake in a 400 degree oven for 30 minutes. Remove the foil and bake for an additional 5 minutes or until the cheese starts to brown.
Enjoy as is or with a little extra buffalo sauce and ranch dressing! You could also garnish with chopped green onion and blue cheese crumbles. If you have a family to feed, a side of buttered noodles or rice makes the meal go a lot further.
Buffalo Chicken Zucchini Boats (Low Carb)
Ingredients
- 4 medium size zucchini
- 1 lb ground chicken
- 1/2 cup buffalo wing sauce
- 1/2 packet ranch seasoning (about 2 tbsp)
- 2 cups shredded mozzarella cheese
Instructions
- Preheat your oven to 400 degrees.
- Prep your zucchini boats by cutting them in half lengthwise and removing the guts with a small melon baller or spoon; place them in a greased 9x13 baking dish.
- In a medium size pan, cook and chop the chicken on medium heat until no longer pink. Stir the buffalo wing sauce and ranch seasoning mix in with the chicken.
- Stuff the zucchini boats with your chicken mixture and then top with a generous amount of cheese.
- Cover your dish with foil and cook for 30 minutes. Remove the foil and cook for an additional 5 minutes.
- Serve alone or drizzled with ranch dressing. Enjoy!
Notes
- To make these zucchini boats even richer (especially if you're following a keto diet), you can add more fat to the recipe by mixing in about 4 oz of cream cheese to the chicken mixture.
- Make certain you are using "Buffalo Wing" sauce, not hot sauce.
- You can additionally garnish these boats with blue cheese crumbles and/or green onion.
