If you’re on a low carb diet, crispy snacks are nearly impossible to find, so these little pizzas are absolutely amazing when you’re used to eating boiled eggs all day.
You simply bake flat piles of grated parmesan until they become crispy and golden brown, and then layer on a little bit of sauce, mozzarella cheese, pepperoni and Italian seasoning. Place them back in the oven for a few minutes, and BAM! The most amazing quick and easy little pizzas in less than 15 minutes.
Step 1Line a large sheet pan with parchment paper and make 9-12 small piles of grated parmesan. Use the back of a spoon to flatten them out into the shape of a pizza crust.
Step 2Bake the flattened cheese piles in a 350 degree oven for 5-8 minutes, or until the cheese turns crispy and golden brown.
Step 3Allow them to cool for a few minutes, and then top with a small amount of pizza sauce. Not too much! You don’t want them to become soggy and messy.
Step 4Next, top with a pinch of shredded mozzarella cheese. Again, the crust is made of cheese so you don’t need much.
Step 5If you can find mini pepperonis at the store, I recommend using those for your topping, but you can also cut your pepperoni into smaller pieces as shown below. Sprinkle with Italian seasoning if desired.
Step 6You guessed it, now place them back in the oven for 3-5 minutes or until the mozzarella cheese is melted. As soon as you pull them out of the oven, place them directly onto a few paper towels to absorb the grease for a few minutes.
These low carb mini pizzas are delicious with a side of Caesar salad!
Crispy Mini Low Carb Pizzas (Made with a Parmesan Crust)
Ingredients
- 12+ tbsp grated parmesan cheese
- 1/4 cup pizza sauce (low sodium is best)
- 1/2 cup shredded mozzarella cheese
- mini pepperonis
- Italian seasoning
Instructions
- Preheat your oven to 350 degrees and line a large baking sheet with parchment paper.
- Make piles of grated parmesan about 1 inch apart directly onto the parchment paper, and then use the back of a spoon to flatten them out into discs. I made mine with 1 heaping tablespoon each, and I could have fit about 12 on the pan.
- Bake for 5-8 minutes, or until the cheese becomes crispy and golden brown.
- Remove from the oven and allow the parmesan crusts to cool for a few minutes. Top each one with a small amount of pizza sauce, shredded cheese, pepperoni and Italian seasoning.
- Place them back in the oven for 3-5 minutes or until the mozzarella cheese is melted.
- Remove from the oven and immediately place them on a few paper towels to soak up the grease for a few minutes before eating.
