A super quick and easy low carb meal!
If you’re looking for healthy dinner ideas that are effortless to throw together on busy weeknights, you’ve got to add this cauliflower pepperoni pizza casserole to your weekly meal plan. It’s incredibly delicious, cheap to make, keto-friendly, and packed full of flavor.
The roasted cauliflower basically replaces a pizza crust which makes it a unique way to enjoy pepperoni outside of the usual carb-filled pizza slice.
Keto Cauliflower Pizza Casserole
- 1 head of cauliflower
- 1 (24oz) jar marinara
- 2 cups shredded mozzarella cheese
- 2 tbsp olive oil
- Salt, pepper, garlic powder, & Italian seasoning
- Pizza toppings of choice
Step 1Cut the cauliflower into small florets, and then toss them with olive oil in a 9×13 baking dish. Mix with salt, black pepper, and garlic powder; arrange in a single layer on the bottom of your dish and bake in a 425 degree oven for 20-25 minutes.
Step 2Remove from the oven and spoon the marinara sauce evenly over the roasted cauliflower. I use an entire jar because my family likes things saucy.
Step 3Sprinkle with about 2 cups of shredded mozzarella cheese and a generous amount of Italian seasoning. Essentially, you can use any cheese you’d like! A little grated parmesan wouldn’t hurt, either.
Step 4Top with the pizza toppings of your choice such as pepperoni, olives, mushrooms, bell peppers, jalapeños, fresh basil, cooked sausage, onions, or anything else you’d prefer.
Step 5Place the casserole back in the oven for 12-15 minutes or until the cheese is melted with that beautiful golden brown color.
Who knew cauliflower could be so good. I seriously enjoy this healthy casserole more than regular pizza. Maybe because I don’t feel like a dump truck after eating it?

Ingredients
- 1 large head of cauliflower (cut into small florets)
- 2 tbsp olive oil
- 1 (24oz) jar marinara sauce
- 2 cups shredded mozzarella cheese
- salt, pepper, garlic powder, & Italian seasoning to taste
- pepperoni (or toppings of choice)
Instructions
- Preheat oven to 425 degrees.
- Place the cauliflower in a 9x13 baking dish and toss with olive oil, salt, pepper, and garlic powder.
- Arrange the cauliflower into a single layer on the bottom of your dish; bake for 20-25 minutes or until the cauliflower starts to turn slightly brown.
- Remove the cauliflower from the oven and evenly spoon the marinara sauce over top. Sprinkle with shredded cheese and Italian seasoning.
- Top with pepperoni and any other optional toppings of your choice.
- Place the casserole back into the oven for 12-15 minutes or until the cheese is melted and golden.
