Because it’s practically flavorless, you can treat it just like regular rice and season it and cook it however you’d like. 

This cilantro lime cauliflower rice couldn’t be any easier to make with just a few ingredients including frozen cauliflower rice, fresh cilantro, lime juice, olive oil, and salt. It pairs really well with any Mexican inspired meal including burritos bowls, tacos, enchiladas or even a taco salad. It’s so yummy, your entire family won’t even realize it’s not actually rice;  just a healthy vegetable in disguise.

Easy Cilantro Lime Cauliflower Rice (Low Carb & Keto)

This healthy and low carb side dish is so quick and easy to make thanks to frozen cauliflower rice! It pairs really well with just about any Mexican inspired meal including burritos, tacos and enchiladas. It's perfect for last minute dinners and meal prepping for the week.

Ingredients

  • 1 (10oz) bag frozen cauliflower rice (about 2 1/4 cups)
  • 2 tbsp olive oil
  • juice of 1/2 lime
  • 1/4 cup cilantro (chopped)
  • salt & pepper to taste

Instructions

  • Microwave the cauliflower rice according to the package directions; open the bag and set aside.
  • Heat the olive oil in a pan over medium heat.
  • Add the cauliflower rice to the pan and stir in with the oil until heated through.
  • Squeeze in the lime juice and season to taste with a few pinches of salt (and black pepper if desired). Do a taste test to see if it's limey and salty enough for you. Adjust accordingly.
  • Add the cauliflower rice to a large bowl and gently stir in the chopped cilantro.
  • Serve warm and store any leftovers in the fridge for up to 3 days.

Notes

If you like garlic, you can also try adding a little fresh minced garlic or garlic powder to this recipe for more flavor.
