This cilantro lime cauliflower rice couldn’t be any easier to make with just a few ingredients including frozen cauliflower rice, fresh cilantro, lime juice, olive oil, and salt. It pairs really well with any Mexican inspired meal including burritos bowls, tacos, enchiladas or even a taco salad. It’s so yummy, your entire family won’t even realize it’s not actually rice; just a healthy vegetable in disguise.
Easy Cilantro Lime Cauliflower Rice (Low Carb & Keto)
Ingredients
- 1 (10oz) bag frozen cauliflower rice (about 2 1/4 cups)
- 2 tbsp olive oil
- juice of 1/2 lime
- 1/4 cup cilantro (chopped)
- salt & pepper to taste
Instructions
- Microwave the cauliflower rice according to the package directions; open the bag and set aside.
- Heat the olive oil in a pan over medium heat.
- Add the cauliflower rice to the pan and stir in with the oil until heated through.
- Squeeze in the lime juice and season to taste with a few pinches of salt (and black pepper if desired). Do a taste test to see if it's limey and salty enough for you. Adjust accordingly.
- Add the cauliflower rice to a large bowl and gently stir in the chopped cilantro.
- Serve warm and store any leftovers in the fridge for up to 3 days.
