I’m always on the hunt for easy dinner ideas for my family, and this Mississippi pot roast makes for THE BEST dinner on the planet! It is incredibly simple to make with just a few cheap ingredients including a beef chuck roast, butter, a packet of ranch seasoning, onion soup mix, and peperoncini peppers.
Simply dump everything into your crockpot, close the lid, and about 8 hours later you’ll have the most tender and flavorful beef. This pot roast is quite versatile in that you can serve it however you’d like; It’s super yummy with mashed potatoes, in toasted hoagie rolls with melted provolone cheese, or over a bed of cauliflower rice or mashed cauliflower if you’re watching your carbs.
How To Make The Best Mississippi Pot Roast
- 3 pound chuck roast (doesn’t have to be exact)
- 1 stick of butter
- 1 packet ranch seasoning mix
- 1 packet onion soup mix
- 1/2 (16 ounce) jar peperoncini peppers
As with most crockpot meals, you’re basically just going to dump everything into your slow cooker, set the heat to LOW, cover with the lid, and wait patiently as your home is filled with the irresistible smell of a home cooked meal.
After about 8 hours, the beef should easily shred with a fork. The fat will also separate from the roast, and I prefer to remove it from the crockpot as I’m shredding.
Once the roast is shredded, set your oven to 400 degrees and place a good amount of the meat onto your sandwich bread, top with cheese, and toast open face in the oven for a few minutes or until the cheese is melted. Or, serve with cauliflower rice or even mashed cauliflower if you’re trying to watch your carbs.

Slow Cooker Mississippi Pot Roast
Ingredients
- 1 3-4 lb beef chuck roast
- 1/2 cup butter (1 stick)
- 1 (1 oz) packet dry onion soup mix
- 1 (1 oz) packet of ranch seasoning
- 1/2 (16 oz) jar deli-sliced peperoncinis
- 6 hoagie rolls (optional)
- 6 slices provolone cheese (optional)
Instructions
- Place the roast into your slow cooker and evenly sprinkle both seasoning packets over top. Top with the butter and peperoncinis (about half of the jar plus 3-4 tbsp of the juice).
- Cover and cook on LOW for approximately 8 hours or until the beef easily shreds with a fork.
- Use a couple of forks to shred the beef and seperate and remove any excess fat.
- If you're making sandwiches, preheat your oven to 400 degrees and place your hoagie rolls onto a large baking sheet and fill with the shredded beef. Top each one with a slice of provolone cheese and bake for about 2 minutes or until the cheese is melted and the bread is toasty.
