You simply dump a few chicken breasts, chicken broth, a block of cream cheese, ranch seasoning mix, chili powder, cumin, garlic powder, cheddar cheese, canned tomatoes, beans and corn into a crockpot, set it on low for about 6 hours, and BAM! The BEST family dinner recipe, ever.
Serve it alone or top it with tortilla chips, avocado, cilantro, jalapeño, or anything else you’d like. It’s just as good leftover, so my family of 4 gets at least two meals out of this recipe. That’s always a bonus!
The Best Easy Crockpot Chicken Recipe
Let’s get started, shall we? Place all of the ingredients except for the cheddar cheese into your slow cooker and mix well.
It should look something like this. Use a spoon to break up the cream cheese so that it melts a little easier.
Cover and cook on LOW for about 6 hours or until the chicken shreds easily and the cream cheese is well incorporated.
Remove the chicken breasts and use a couple of forks to shred it apart. Place it back into your slow cooker with about one cup of cheddar cheese and mix well. Allow the chicken to absorb the spices and juices for an additional 15-30 minutes or until you’re ready to eat.
Serve alone or with tortilla chips, Fritos, avocado, extra cheddar, cilantro, jalapeño or anything else you think would be tasty on there.
Even your picky eaters will love this easy weeknight meal!
