Simply add “chowder” to the end of any soup name and you know it’s going to be super rich and delicious. This recipe is no exception! Top it with cheddar cheese for the finishing touch.
This keto friendly soup is so rich and yummy, you would never guess how much nutrition is packed in there. I suppose you could add bacon to just about anything to make it feel like comfort food.
Cauliflower is high in vitamin C, fiber, folic acid and potassium. It provides more nutrition than its white appearance would have you believe.
If it weren’t for cauliflower, I’m not sure that I could handle this low-carb thing. This simple vegetable seems to be the ideal replacement for rice, pasta, potatoes and even pizza crust!
To make this recipe even easier, I’ll bet you could use frozen cauliflower florets. You would probably just need to use a little less chicken broth to get the same consistency.
Keto Cauliflower Chowder
Ingredients
- 1 1/2 cups chicken broth (or veggie broth)
- 1 head of cauliflower (cut into small pieces)
- 1 cup spinach
- 1/4 cup cream cheese
- 1/2 cup diced onion
- 2 tbsp butter
- 1 tbsp minced garlic
- 1/2 pound cooked crumbled bacon (for topping)
- salt & pepper to taste
Instructions
- In a large pot, sauté the butter and onions until clear. Add the minced garlic and sauté for an additional minute.
- Add the chicken broth, seasoning, and cauliflower to the pot and simmer for about 15 minutes or until the cauliflower is tender.
- Carefully pour half or more of the mixture (along with the spinach) into a blender and pulse a few times until creamy.
- Place back on the heat; add the cream cheese and about a cup of water or more chicken broth (depending on your consistency preference).
- Simmer for 10-15 minutes or until the cream cheese is melted and blended nicely.
- Top with crumbled bacon and enjoy! Feel free to add a little shredded cheddar cheese as well.
