Even if you’re not trying to follow a keto or low carb diet, you’re going to love this easy way to make chicken in the oven. You simply mix together the cream cheese and pesto and slather it on the chicken. Top with mozzarella and bake! That’s it.
You can serve this with a low carb side like cauliflower rice, salad or veggies, or serve it with a side of pasta or rice for the rest of the family. Either way, it’s pretty dang good.

This low carb chicken recipe is so easy, that’s all you have to do is mix together 8 ounces of softened cream cheese with about 1/3 cup of store-bought basil pesto. Spread it all over the chicken and then top it with mozzarella cheese.
Make sure you choose a good quality basil pesto. The best ones are located in the refrigerator section of the grocery store by the refrigerated pasta.
Bake for about 30 minutes, and then top with fresh basil and tomatoes.

Cauliflower rice is my go-to side dish because it goes with just about everything, including this baked cheesy pesto chicken. You can buy cauliflower rice frozen, and then just pop it in the microwave.
Cheesy Pesto Chicken Bake (Keto & Low Carb!)
Ingredients
- 3-4 chicken breasts (about 1.5 pounds)
- 8 ounces softened cream cheese
- 1/3 cup store-bought basil pesto (I like the Giovanni Rana brand)
- 1 cup shredded mozzarella cheese
Garnish
- 1/2 cup cherry tomatoes (halved)
- 4-6 basil leaves (chopped)
Instructions
- Preheat your oven to 375 degrees and grease a large baking dish.
- Mix the softened cream cheese and basil pesto together.
- Lay the chicken breasts flat into your greased baking dish and evenly spread the cream cheese pesto mixture over top.
- Top with 1+ cups of shredded mozzarella cheese.
- Bake uncovered in the center rack of the oven for 30-45 minutes, or until the internal temperature reaches 165 degrees.
- Garnish with your fresh chopped tomatoes and basil. Enjoy!
