Easy Keto Strawberry Shortcake Chaffle Recipe
- 1 egg
- 1/3 cup shredded mozzarella
- 1 tbsp almond flour
- 1 tbsp cream cheese
- 1/2 tbsp Swerve (or any low carb sweetener)
- 1/4 tsp baking powder
Mix everything together and pour half of the batter into a greased pre-heated mini waffle maker. Cook until the automatic timer or light goes off; repeat for next chaffle.

If you’ve ever made whipped cream before, then you know how easy it is to prepare. It’s so delicious you can eat it by the bowlful spoonful! You’re simply going to use a hand mixer on high speed to whip together 1 cup of heavy whipping cream, 1 tbsp of low carb sweetener and 1/2 tsp vanilla extract until stiff peaks form.
It’s low carb and delish! It pairs wonderfully with these sweet chaffles, but I also like it in my morning coffee and on top of these crispy keto waffles or low carb pancakes.
Once your chaffles have cooled and your keto whipped cream is fluffy and ready to go, simply layer them together with sliced strawberries. Yum! The combination of this sweet keto dessert is incredible.

- Mini Waffle Maker
Ingredients
- 1 egg
- 1/3 cup shredded mozzarella cheese

- 3-4 sliced strawberries

- 1 cup heavy whipping cream
- 1 tbsp Swerve (or any low carb sweetener)
- 1/2 tsp vanilla extract
Instructions
- Preheat your mini waffle maker. Mix all of your chaffle ingredients together in a small bowl (egg, mozzarella, almond flour, cream cheese, low carb sweetener and baking powder). Grease your waffle maker with a non-stick spray and pour half of the batter in. Cook until the automatic timer or light goes off; repeat for next waffle.
- While the chaffles are cooling, whip the heavying whipping cream, low carb sweetener and vanilla extact together with a hand mixer until stiff peaks form (this takes about 5 minutes). *See Notes Below
- Layer the sweet chaffles, whipped cream and sliced strawberries together. Enjoy!
Notes
- *The recipe for the keto whipped cream makes at least 4 servings, so feel free to cut the recipe down if desired. I prefer to just make a large batch so that I have leftovers for something else later like my morning coffee or my favorite crispy breakfast chaffles.
- If you happen to have a cake batter extract or strawberry extract stocked in your pantry, try adding 1/2 a teaspoon to the chaffle batter. Yum!
