Ingredients
1boxspice cake mix
1(15 ounce) canpumpkin puree(NOT pumpkin pie mix)
1cupchocolate chips
Instructions
Preheat your oven to 350° F and generously grease a muffin pan or line it with muffin liners.
In a large bowl, mix together the DRY spice cake mix and pumpkin puree until well blended. The batter will be very thick!
Fold in about 1 cup of chocolate chips to the batter.
Evenly distribute the batter into your muffin pan (each cup should be about 3/4 full). Add more chocolate chips on top if you'd like!
Bake for 15-20 minutes or until a toothpick comes out clean. If you are making mini muffins, you will probably need to cut the baking time in half.
Notes
You could also mix in toasted pecans or raisins to the batter. Serve alone or topped with a little butter or cream cheese!
